I'm currently riding with Easton Monkeylite EC70 bars, but at 685mm, I'm suffering on narrow trails. I've thought of cutting the bars down, but this seems risky, so my next thought is to get the EC90 SL lo rise, which are 635mm width.
Does anyone know if the EC90 are any good, and even if the EC90 flat bars are any good on a 575, as the flat bars are about 590mm, so would give far more clearance.
Any thoughts?

As with many things, it's all down to personal preference. However, I would say grab a cheap set of narrow bars - see if it suits before splashing out for a nice set.
I have 660mm bars on my 575, which rarely feel too wide.

Cutting carbon bars isn't a big deal. I work in a shop and we do it all the time. I had my MonkeyLites cut down about 1/2" per side. Use a fine tooth hacksaw and cut swiftly. No worries
