just a thought, having a full carbon rear triangle for the 575s, do you guys think in time after the mud scratches say the carbon chainstay, will it lessen the stiffness/toughness of the carbon and eventually start to crack where it was scratched?

Try using helicopter tape around where mud is likely to scratch the carbon rear stays to protect it. But in answer to scratches then no just mud and dirt marks won't make the carbon crack. Carbon has a very high stress/crack fracture point like steel and alloy.
